Food pairing: Something as underrated as this should only rightly be paired with the weird and wacky; confit duck tacos (cooked down with plenty of anise and sweet spice) would be a fun way to see this off.
The largest estate in Tavel and dates back over 400 years. Its current history dates from 1920 when it was bought by Jean Olivier who reassembled the vineyards surrounding the hilltop Chateau the estate is now owned by his son in law Paul Bez and his sons Vincent, winemaker and Bruno, marketing.
At Château d’Aqueria they use seven of the nine permitted varietals in the Tavel AC, the high proportion of white grapes( over 30%) gives freshness and brings balance. The wine sees no oak and is fermented and aged in stainless steel. The wine has a bold ruby colour and a rich nose of red fruits supported by a generous and spicy palate.
