Pep Aguilar and Patric Morillo embody a contemporary and traditonal vision of Montsant and Priorat. Having worked on other winemakers’ interesting projects, they began their personal journey masterminding the wonderful Celler Comunica project with wines that are absolutely committed to freshness, obsessed with looking for little nuances within them.
They make their wines in an old farmhouse estate, known as Mas d’en Cosme, in the town of Falset, on the border of Priorat and Montsant.
Celler Comunica farms 7HA of old Garnacha and Carignan vines with some Syrah, planted on a soil of decomposed granitic sands with several types of slate. The team focus on producing fresh wines with bright clean fruit rather than excessive extractions and high alcohol. These wines are chuggable and thirst quenching.
Celler Comunica’s top red is the wonderful Suc de Sauló. Fermentation is with wild yeasts, Pep and Patri use no oak at all thus there’s a longer maceration for 10-12 days and 22 months on stainless steel tanks on fine lees.
The Suc de Sauló is their most complex wine, rich and powerful, yet balanced an elegant, with aromas of red fruit, and very spicy. Enjoy it with food and prepare to be transported to the sunny granitic vineyards of Mas d’en Cosme in the exciting Montsant.
