Tempo al Vino is an offshoot of Schola Sarmenti in Salento, Puglia, whose wines are crafted by young winemaker Sylvia Formigli. Their young vineyards are just a short distance from the sea, farmed organically and maintained under the old Apullian training system called Albarello, which has been used since ancient times. 

This young, unoaked version from the Schola Sarmenti vineyards in Salento is lustrous ruby-violet in colour with a warm, dark-fruited nose and a smooth wash of ripe plum, pepper spice and soft coffee. Rich, smooth and easy drinking from start to finish.

Tempo Al Vino ‘Alese’ Negroamaro 2021

Tempo al Vino is an offshoot of Schola Sarmenti in Salento, Puglia, whose wines are crafted by young winemaker Sylvia Formigli. Their young vineyards are just a short distance from the sea, farmed organically and maintained under the old Apullian training system called Albarello, which has been used since ancient times. The native varieties of the region such as Negroamaro and Primitivo are promoted and made to a very high standard under organic farming principles.

Schola Sarmenti, a stunning winery with soaring ceilings sculpted from local tuff and lecce stone, dates from the mid-nineteenth century and is run by the Marra and Calabrese families. The vineyards are farmed organically and within sight of the warm waters of the Adriatic. Schola Sarmenti practises “green harvesting”, where a portion of the immature crop is sacrificed (i.e. picked and discarded) mid-season to increase the ripeness and quality of the remaining bunches. It also uses the ancient Puglian vine training system, Alberello.
